Since living with my boyfriend(esp since having Kaden) I've really gotten into cooking and baking so I thought I would start sharing my favorite recipes with everyone!

Cinnamon Swirl Banana Bread
Ingredients:
3-4 over-ripe bananas, smooshed up
1/3 cup melted butter
1 cup sugar
1 egg, beaten
1 tsp vanilla, I used a little more but I love vanilla
1 tsp baking soda
dash of salt
1 1/2 cups flour
For the swirl:
1/3 cup sugar
1 tsp cinnamon, I used more since I love cinnamon

Directions

1. Preheat oven to 350. Butter and flour a loaf pan.

2. Mix bananas, butter, sugar, egg, and vanilla together.  Sprinkle baking soda and salt around on top of banana mixture.  Then gently stir in flour. Be careful not to over mix!!

3. In a small bowl, mix together 1/3 cup sugar and 1 tsp cinnamon

4. Add 1/2 of the batter to the loaf pan and then sprinkle half or a little more of the cinnamon-sugar mixture all over the batter.  Add the rest of the batter and then sprinkle the leftover cinnamon-sugar mixture on top!

5. Bake for  50-60 minutes, but keep a close eye on it depending on the size of your loaf pan!

Crispy Parmesan-Ranch Chicken Breast (Strips or Tenders)
Ingredients

1 cup corn flakes(crushed)
3/4 cup grated Parmesan cheese
1/2 tsp garlic powder(optional)
1/2 tsp black pepper
1oz ranch dressing mix
8 boneless skinless chicken breast
1/2 cup melted butter

Directions

1. Grease a 13x9in baking dish

2. Set oven to 350 degrees F

3. In a shallow dish mix together the cornflake crumbs with Parmesan cheese, garlic powder, black pepper and dry ranch dressing mix.

4. Place the melted butter in a shallow dish

5. Coat the chicken breast or strips into the melted butter, then roll into the cornflake mixture

6. Place in prepared baking dish

7. Bake uncovered for about 30 minutes or until the chicken is cooked through(strips or tenders might take less time)


Tilapia Ingredients
2-4 Tilapia
1 cup grated Parmesan
2 tsp paprika
1 tsp lemon pepper
1 tbs parsley
1/2 tsp red pepper flakes

Directions

1. Coat fish with olive oil

2. Cover in cheese mixture

3. Bake at 400 for 10-12 minutes


Slow Cooker Chicken Ranch Pasta Ingredients
2-3 garlic cloves, minced
1 package ranch dressing mix
1 can condensed cream of chicken soup
1 cup sour cream
2-4 (depending on size) chicken breast
8 oz of pasta

Directions

1. Place chicken breast in bottom of slow cooker and season with salt and pepper

2. In a small bowl stir together soup, sour cream, garlic, ranch dressing mix, pour mixture over chicken

3. Cook on high for 3.5hrs or on low 6-7hrs

4. Remove chicken and shred.  Return to pot and mix thoroughly then spoon over cooked pasta.
